Freeze the watermelon until they are frozen solid. Lay the watermelon pieces on the parchment-lined baking tray. The smaller the pieces, the faster they will freeze. I garnished mine with black olives-I couldn't resist the color combination and their salty, bitter flavor worked, too. Cut the watermelon into whatever shape you like best- cubes, balls, triangles, etc. Or serve it along with other salads for a summer buffet. Serve it with grilled fish or lamb or cold chicken or veal. I would not mix the two ingredients together too far in advance. I used Greek feta, and the crumbled pieces were a nice contrast to the cubes of watermelon. Seedless watermelons will make this a no-brainer. On a hot day I can't think of anything more brilliant. Like prosciutto and melon or tomatoes with lots of salt-the idea being that the salt intensifies flavor and sweetness. This is one of those great and inspired combinations that seems like a natural once you've tried it. Spoon chamoy around the inside of the glasses, then pour the mango puree into the glasses, add some fresh mango and sprinkle with a little tajin. Tomato Basil Infusion: Combine the classic flavors of tomato and basil by adding ripe tomato chunks to the watermelon basil salad. Drain and spread on a large baking sheet.
